Is it possible to embed the used fonts in an existing pdf?

PDFsharp does it by default when creating PDF files.

PDFsharp cannot embed fonts for existing PDFs without embedded fonts.

Is it possible to "copy" the pages of the PdfDocument with PdfFontOptions = Embed?

Pages are copied with all required resources from the PDF file, but if fonts are not embedded, they will not be added automatically.
